Spinach Tagliatelle is a very special pasta, made with the upmost care by the artisan pasta maker Mario Cimaroli of La Fraiola. Based in a small town in the Abruzzo region, the La Fraiola pasta makers utilise traditional processes whilst crafting their pasta sheets, using a single pass of drafting. This imbues the sheets with a robust consistency for cooking, whilst helping to maintain a great flavour and a lack of stickiness. The single pass drafting method also ensures that the Gluten matrix is left intact which gives you a soft and resistant texture.

A wonderful addition to a number of dishes, the La Fraiola Spinach Tagliatelle compliments a variety of sauces, and works great with any vegetable, meat of fish dishes. This pasta is also excellent eaten plainly, with a garnish of butter and sage, or with extra virgin olive oil and a light sprinkle of parmesan cheese.
