A medium mature sheep cheese produced using sheep's milk from the Emila area and harvested only in the months between April and June, when milk is at its best. It is thermised at low temperature, then the small truckles are matured no less than 90 days; this creates a thin layer of mold and then the cheese is treated on the surface with olive oil.
With an intense and tasty flavour, it is called Pecorino di Una volta which means ‘Pecorino of a Time’ as it is similar to the one produced back then.
