This authentic Italian dry cured meat sausage has been appreciated since ancient times. According to Varro, the Romans learned the art of bagging meat near Lucani in Italy. This sausage was widespread in Rome by the legionaries who used it in the canteens of their camps. The "sausage" was made with pieces of meat and fat, cut into pieces and everything was seasoned with pepper, salt, sweet spices and were placed to dry in the smoke.
It is an artisan product and we buy direct from the producer. Soppressata is fast becoming the trending topping among serious pizza makers.
