This Egg Tagliatelle is a special authentic pasta from the typical Italian tradition. Made with durum wheat carefully selected by Mario Cimaroli of La Fraiola, a pasta maker in a small town in the Abruzzo Region. The Fraiola tagliatelle pasta makers use traditional processes to obtain the sheets of pasta with a single pass of drafting. This type of processing gives the pasta a consistency and robustness for cooking, maintaining the sensory qualities and ensuring an absence of stickiness. The gluten matrix is preserved by the single pass of drafting, and this gives a soft and resistant texture.

La Fraiola Egg Tagliatelle works excellently with all types of sauces, vegetable, meat or fish. However the flavour of the pasta stands up especially well to eating it "just blank" with butter and sage or extra virgin olive oil with a light sprinkling of parmesan. We recommend heating the plate before serving.
